Chris Long, Executive Chef for Second St. Restaurant shared these delicious recipes with all students during our November 2012 Healthy Lifestyles Week Chef Demonstrations, sponsored by the MES PTA Healthy Lifestyles Committee, Second St Restaurant and Kelrae Farm. They were a big hit with the kids! The recipe appears below so you can try it at home.

Acorn Squash Chips
- 1 each – Acorn Squash
- 1 TBL – Extra Virgin Olive Oil (EVOO)
- to taste – Kosher Salt
- to taste – Fresh Ground Black Pepper
Wash acorn squash thoroughly. Split in half, scoop out the seeds. Using a slicer or mandolin, slice squash 1/8″ thick. Toss with EVOO, salt and pepper and arrange in a single layer on a sheet of parchment paper and a second cookie sheet.
Bake at 300F till crispy (check every 20 minutes)
Greek Yogurt Ranch
- 1 cup – Greek Yogurt (plain)
- 2 tsp – Dill
- 2 tsp – Garlic Powder and 2 tsp of Onion Powder
- 1 tsp – Celery Seed
- 1 tsp – Parsley
- 1 tsp – Lemon Juice
- to taste – Salt and Fresh Ground Black Pepper
Combine all ingredients well and serve.
